The Best Ever! Tex-Mex Chicken Fajitas

Gambar
Happy Wednesday Slow Roasters!  It has been a fabulous week here at TSRI.  We have been gardening, cooking, eating, having family time and cooking some more.  Recently we have been cooking incredible recipes from a really cool blog. Herbie Likes Spaghetti which is written and developed by Bryan, YiRan, Herbie and Pepper.  Herbie and Pepper are the feline furbabies of Bryan and YiRan. It is really great to find blogs that are more of a team effort.  With the added benefits of an Italian inspired blog, with the cutest furbaby pictures ever they won me over.  The fabulous food really put me over the top, recipes like The Best Spaghetti all'Amatriciana which I have on the sajian for next week.  I am so excited to try this dish! Planting in my beautiful new garden! So as I was scouring delicious recipes casually perusing their blog, I must have been on a Mexican food kick.  Although I bookmarked Mario's Meatballs, Veal Scallopini Picata, a...

Green Chile And Cheese Sausage Poppers

Gambar
Picking party food is tough for any occassion, but when you gather your closest friends and family you really want them to enjoy themselves.  My 'crew' is pretty laid back.  It's all about the company with us.  But, lets say we are never hurting in the food department.  Finger food is the perfect dinner for our parties. For our Christmas party I decided meatballs would be a great make ahead dish that could warm in the crock pot with little effort.  Boy, was I right.  I emptied 2 bottles of my kegemarane honey BBQ sauce with 5 diced chipotles peppers into a 5 quart crock pot.  Then added my Green Chile and Cheese Sausage Poppers.  They were fantabulous! In another pot I kept my Sweet and Sour meatballs simmering. Being the over achiever that I am...  I made 2 batches of these Green Chile and Cheese Sausage Poppers.  Seriously.  200 meatballs.  I froze half and defrosted them as needed.  They are perfect even on their...

Restaurant-Style Garden Fresh Salsa

Gambar
This Restaurant-Style Garden Fresh Salsa is absolutely my kesukaane fresh salsa ever! This easy recipe is made with fresh vegetables and a secret ingredient to give it a a deeper flavor that truly makes it amazing. It is an incredibly simple salsa with little chopping. Just toss all the ingredients in your food processor and pulse until it reaches your desired consistency. Salsa is a staple here in the Southwest. This is my kesukaane kind. We call it "Just North of the Border Salsa". Living in Arizona we truly are just 'North of the Border', so it was fitting. I personally like a more fresh tasting salsa, one that I can eat without constantly dabbing my eyes and nose. Oh and I prefer not to have to take in a gallon of liquids to try to put out the fire (which doesn't work anyway, try a milk based remedy. I like to use a spoon of vanilla ice cream to sooth my taste bud fires). I have to say that my idea of salsa before I moved to Arizona was laughable. It ...
