Southwestern Turkey Meatloaf

Happy Monday Slow Roasters!  Today is On The Lighter Side at .  I would like to share with you a new meatloaf I created. We surely love meatloaf in this house, but I get a little tired of the old bakud Meatloaf with Balsamic Glaze which happens to be Chad's kesukaane dish that I make and Munchkins kesukaane 3 Ingredient Meatloaf  so, I decided to give some new flavors a try and I developed this incredibly flavorful and delicious Southwestern Turkey Meatloaf.  It is a great low calorie option as it only has 267 calories per serving and 8 grams of fat. We love it so much I made it a 12 serving dish, so we could freeze half.  But the other half never made it to the freezer.  We ate it for 4 meals straight!  It was delicious with some spicy refried beans and some corn.  Enjoy! Happy Wednesday Slow Roasters!  It has been a fabulous week here at TSRI.  We have been gardening, cooking, eating, having family time and cooking some more.  Recently we have been cooking incredible recipes from a really cool blog. Herbie Likes Spaghetti which is written and developed by Bryan, YiRan, Herbie and Pepper.  Herbie and Pepper are the feline furbabies of Bryan and YiRan. Simple Asian Honey Grilled Chicken With Marinade

After enjoying the 30 Minute Sweet and Sour Pork so much, Chad surprised me by admitting that he does indeed like Asian flavors. Imagine my surprise after 9 months of Chinese food cravings and a husband that I had to drag kicking and screaming.  So, this was a great piece of news.  Immediately the wheels started turning. So, first I decided to bring it to the grill. Restaurant-Style Garden Fresh Salsa

This Restaurant-Style Garden Fresh Salsa is absolutely my kesukaane fresh salsa ever! This easy recipe is made with fresh vegetables and a secret ingredient to give it a a deeper flavor that truly makes it amazing. It is an incredibly simple salsa with little chopping. Just toss all the ingredients in your food processor and pulse until it reaches your desired consistency. Salsa is a staple here in the Southwest. This is my kesukaane kind. We call it "Just North of the Border Salsa". Living in Arizona we truly are just 'North of the Border', so it was fitting. I personally like a more fresh tasting salsa, one that I can eat without constantly dabbing my eyes and nose. Oh and I prefer not to have to take in a gallon of liquids to try to put out the fire (which doesn't work anyway, try a milk based remedy.
