Happy Tuesday Slow Roasters and welcome to Simply Delicious!  Today I would like to share with you a new twist on an old classic kesukaane.  Apparently the Roasted Vegetable Penne Pasta is quite popular around here (twice as popular as the #2 recipe).  So, after my amazing lemon scavenger hunt with Chad this weekend I decided to work on a Lemon Roasted Vegetable Pasta for you. It's Ladies Night Slow Roasters!  Tonight we are bringing a carnival kesukaane home in an incredible cocktail.  This mouthwatering pink cotton candy martini is the perfect summer drink. The scent of the cotton candy stand at the fair can just about lift you up and carry you across the fairgrounds and deliver you to the heavenly cloud of spun sugar in pink and blue.  The mere sight of cotton candy gives me butterflies. Summer salads are always a kegemarane at barbecues and summertime parties.  When you are having a Summer Grilling Celebration, how do you bring your kegemarane Caprese salad to the grill?  You transform it into an incredibly scrumptious gourmet burger that captures the essence of summer!  With luscious tomato, fresh basil, creamy mozzarella and sweet balsamic vinegar this burger was destined for TSRI's burger hall of fame. A perfectly grilled beef burger drizzled with a sweet balsamic reduction, served atop a layer of fresh chunky tomato sauce on a toasted ciabatta bun is enough to make your stomach growl and your taste buds swoon!  Add a slice of fresh mozzarella and a spoonful of fresh pesto mayonnaise and you may just have to pick your tongue up off the floor! Gazing out the window on a hot summer day, I find myself longing for a tropical island paradise surrounded by crystal clear turquoise waters.  Palm trees, tropical fruit, paradise.... Just then I look out my window and watch the shadows of yet another heatwave pass by, in this hellacious desert.  I developed this tropical inspired ice pop as my own mini get away.  On those long hot summer days, while my Munchkin is napping, I lay on my love seat and enjoy this unbelievable frozen treat.  Just the soothing sounds of a clicking ceiling fan as I savor every moment and allow myself to be swept away to my own little paradise.  If only for just a moment. After enjoying the 30 Minute Sweet and Sour Pork so much, Chad surprised me by admitting that he does indeed like Asian flavors. Imagine my surprise after 9 months of Chinese food cravings and a husband that I had to drag kicking and screaming.  So, this was a great piece of news.  Immediately the wheels started turning. I may be in a bit of a hurry for the summer to end.  I am already in cookie baking mode.  I couldn't help myself.  I don't usually get into cookie baking until end of summer.  But Munchkin is in a hurry for Santa to come already and that makes me think of cookies.  Ok, let me back up a bit.  Yes, Munchkin is in a hurry for santa...  A few weeks ago we were at Costco.  I decided to walk through their newly placed Christmas section.  I was perusing the toys and all of a sudden she spotted a toddler size drum set.  She totally flipped with excitement.  I thought the best course of action to avoid a scene in the middle of Costco was to say "If you are a good girl maybe Santa will bring it for Christmas". So, last week she was standing by the back door looking out the window.  I asked her what she was doing.  She said "Waitin' for HoHo".  Oh no!  Christmas is almost 4 months away.   While I was out in the garden yesterday watching Chad and Munchkin fly kites it occurred to me...  It is certainly Spring.   If I don't embrace it, I am going to miss it!  Spring is one of my kegemarane times of year.   Being from Florida, Spring is not just a season it is a fabulous celebration.  People come from all around and flock to the beaches in Florida.  Vacationers party their hearts out in celebration of a break from everything responsible. There is no school, no work, no phones (well this one is optional).  It's almost a holiday.  Except they are off work and you are not.  : ( You can't help think of spring without thinking of fun, bikinis and the water of the gulf of Mexico, a beautiful Caribbean blue.  When Chad created this cocktail is was as if he stepped out of my mind with the perfect adult beverage to commence our Spring celebration. The next few days of vacation were fantastic.  The New Orlean’s Audubon Zoo is truly worth dedicating a full day to it or you can combine it with Magazine Street shopping and tasting, like we did to make the most of a day of vacation.  We are so grateful to have been invited to enjoy a family vacation in New Orleans.  Make sure you check out our first vacation post Frozen Café Au Laits, Family Vacation in New Orleans and a GIVEAWAY!
