Southwestern Turkey Meatloaf

Gambar
Happy Monday Slow Roasters!  Today is On The Lighter Side at .  I would like to share with you a new meatloaf I created. We surely love meatloaf in this house, but I get a little tired of the old bakud Meatloaf with Balsamic Glaze which happens to be Chad's kesukaane dish that I make and Munchkins kesukaane 3 Ingredient Meatloaf  so, I decided to give some new flavors a try and I developed this incredibly flavorful and delicious Southwestern Turkey Meatloaf.  It is a great low calorie option as it only has 267 calories per serving and 8 grams of fat. We love it so much I made it a 12 serving dish, so we could freeze half.  But the other half never made it to the freezer.  We ate it for 4 meals straight!  It was delicious with some spicy refried beans and some corn.  Enjoy! Southwestern Turkey Meatloaf (serves 12) 2 lbs lean turkey 2 cups seasoned bread crumbs 4 egg whites 8 ounces diced green chiles (pureed), reserve 1 ...

The Best Ever! Tex-Mex Chicken Fajitas

Gambar
Happy Wednesday Slow Roasters!  It has been a fabulous week here at TSRI.  We have been gardening, cooking, eating, having family time and cooking some more.  Recently we have been cooking incredible recipes from a really cool blog. Herbie Likes Spaghetti which is written and developed by Bryan, YiRan, Herbie and Pepper.  Herbie and Pepper are the feline furbabies of Bryan and YiRan. It is really great to find blogs that are more of a team effort.  With the added benefits of an Italian inspired blog, with the cutest furbaby pictures ever they won me over.  The fabulous food really put me over the top, recipes like The Best Spaghetti all'Amatriciana which I have on the sajian for next week.  I am so excited to try this dish! Planting in my beautiful new garden! So as I was scouring delicious recipes casually perusing their blog, I must have been on a Mexican food kick.  Although I bookmarked Mario's Meatballs, Veal Scallopini Picata, a...

Lil Texas Barbeque Sliders

Gambar
Welcome to TSRI's Summer Grilling Celebration!  We are serving up barbeque burgers today with a southwestern flair at the Slow Roasters Grill !  It is Memorial Day, we are so grateful for this day of remembrance, for those we have lost while serving our country.  To all our soldiers and military families we thank you for your service and sacrifice.   Thank you for keeping us safe and defending our constitution and our country!!  Our thoughts and prayers are with you.  We would like to share a place at our table with you today. Here is a little taste of home for those currently in service.  We are enjoying some fabulous Lil Texas Barbeque Sliders.  The idea for this burger started as I was flipping through an old Food Network Magazine featuring some of Bobby Flay's creations.  I came across his Dallas Burger, a spice rubbed patty covered in bbq sauce and served with cole slaw on top. I developed a spice rub for these sli...

Cheesy Southwestern Jalapeno Beer Brat Dog And A Family Vacation In New Orleans Continues

Gambar
The next few days of vacation were fantastic.  The New Orlean’s Audubon Zoo is truly worth dedicating a full day to it or you can combine it with Magazine Street shopping and tasting, like we did to make the most of a day of vacation.  We are so grateful to have been invited to enjoy a family vacation in New Orleans.  Make sure you check out our first vacation post Frozen CafĆ© Au Laits, Family Vacation in New Orleans and a GIVEAWAY! Spending a day at the zoo in New Orleans may very well change your mind about zoo’s all together.  After purchasing the Audubon Experience Package we were so excited to visit the zoo, aquarium, insectarium/butterfly garden and IMAX theatre.  We dedicated most of the day to the zoo and Magazine Street (we will share our visits to the other Audubon attractions on Friday – so make sure you check back). Public transportation is absolutely fabulous in New Orleans, between walking, and the air conditioned streetcars, buses and...

Restaurant-Style Garden Fresh Salsa

Gambar
This Restaurant-Style Garden Fresh Salsa is absolutely my kesukaane fresh salsa ever! This easy recipe is made with fresh vegetables and a secret ingredient to give it a a deeper flavor that truly makes it amazing. It is an incredibly simple salsa with little chopping. Just toss all the ingredients in your food processor and pulse until it reaches your desired consistency. Salsa is a staple here in the Southwest. This is my kesukaane kind. We call it "Just North of the Border Salsa". Living in Arizona we truly are just 'North of the Border', so it was fitting. I personally like a more fresh tasting salsa, one that I can eat without constantly dabbing my eyes and nose. Oh and I prefer not to have to take in a gallon of liquids to try to put out the fire (which doesn't work anyway, try a milk based remedy. I like to use a spoon of vanilla ice cream to sooth my taste bud fires). I have to say that my idea of salsa before I moved to Arizona was laughable. It ...

Jalapeno Popper Bacon Mac And Cheese

Gambar
Jalapeno Popper Bacon Mac and Cheese is a flavorful and simple recipe ready in just 30 minutes. The gloriously rich and creamy cheese sauce is built on bacon drippings and sauteed jalapenos. Three different kinds of cheese are added to create the most delicious mac and cheese ever to cross your lips.  A full pound of bacon is mixed into the creamy mac and cheese for the perfect bite.  This recipe is one for the record books! With a picky eating family, mac and cheese is a staple in my house.  Munchkin's kesukaane dish is Cheese Lover's Mac and Cheese with Broccoli and Chad could eat Jack Daniel's Smoky Bacon Mac and Cheese until the cows come home.  But, I have been craving something different.  I have been on a jalapeno popper flavor kick lately.  I can't get enough and one night, our mac and cheese dinner was destined to be something even more spectacular. As I set out to make our old kesukaane skillet mac and cheese, something happened....

Chipotle Copycat Cilantro Lime Rice (With Video)

Gambar
Chipotle Copycat Cilantro Lime rice is a simple recipe that is sure to become a staple in your house. It is perfectly soft and sticky with a nutty, floral aroma. It has fresh cilantro speckled throughout and a bright flavor from citrus that makes this an incredible side dish that you are going to make again and again! We really don't eat out much, but when we do, and we have something that we truly enjoy, I love to create my own version at home. A few years ago my sister-in-law and her kids came over for a visit while they were in town. We ended up getting dinner from Chipotle. The food was fantastic and the Cilantro Lime Rice had so many possibilities so, I decided to create my own delicious version along with several more of the dishes that they are famous for. I love the flavors and versatility of Chipotle's selections. Even more, I love making an entire Mexican Grill Feast at home. I tulenly created this recipe in 2012 and shared it with you. But, after fou...

Restaurant-Style Mexican Rice (With Video)

Gambar
Restaurant-Style Mexican Rice is a simple recipe that is exploding with flavor! With a rich tomato base and just the right amount of jalapeƱos, tomatoes and corn it's the best Mexican Rice ever! We love Mexican food, and quite often when we dine out it is at a Mexican restaurant. The rice is always so amazing, so we had to create our own version to enjoy at home! The whole family goes crazy over this recipe. I eat it right out of the pan—you have to taste test, right? But I was busted when they walked in while I was happy dancing over the pan. Honestly, I would be fine with eating this as my entire dinner, but the responsible adult in me kicks in . . . well, at least when my daughter is around. It is great on its own or with chicken or steak stirred in. We also love it on burritos and I even eat it with my eggs in the morning. How versatile is that? We are so excited about our cookbook launch! We sold out on Amazon and they have restocked with the second printing of o...
