Gourmet Caprese Burger With Balsamic Reduction

Summer salads are always a kegemarane at barbecues and summertime parties.  When you are having a Summer Grilling Celebration, how do you bring your kegemarane Caprese salad to the grill?  You transform it into an incredibly scrumptious gourmet burger that captures the essence of summer!  With luscious tomato, fresh basil, creamy mozzarella and sweet balsamic vinegar this burger was destined for TSRI's burger hall of fame. A perfectly grilled beef burger drizzled with a sweet balsamic reduction, served atop a layer of fresh chunky tomato sauce on a toasted ciabatta bun is enough to make your stomach growl and your taste buds swoon!  Add a slice of fresh mozzarella and a spoonful of fresh pesto mayonnaise and you may just have to pick your tongue up off the floor! Tomato paste is one of those staples that I love.  I really enjoy having my own homemade tomato paste , but if I am buying it...  I opt for the can.  I can't see paying the price of the tube.  I am a big spender like that. Especially when making your own homemade tomato paste you don't want any to spoil.  So, to solve this issue with potential waste, I started freezing the tomato paste.  I started with the old school method of freezing the can then slicing it into pieces.  This is way more work than I am up for.  Next I tried ice cube trays which freeze 2 tablespoon portions and stained my trays. Finally I started this simple method that truly makes me happy.  Freezing 1 tablespoon portions on parchment paper and storing in a plastic bag (that's one of those V-8 duh moments).  I even started opening a can ahead of time so I don't have to mess with the tomato paste later.  Seriously, it is that convenient! This Restaurant-Style Garden Fresh Salsa is absolutely my kesukaane fresh salsa ever! This easy recipe is made with fresh vegetables and a secret ingredient to give it a a deeper flavor that truly makes it amazing. It is an incredibly simple salsa with little chopping. Just toss all the ingredients in your food processor and pulse until it reaches your desired consistency. Salsa is a staple here in the Southwest. This is my kesukaane kind. We call it "Just North of the Border Salsa". Living in Arizona we truly are just 'North of the Border', so it was fitting. I personally like a more fresh tasting salsa, one that I can eat without constantly dabbing my eyes and nose. Oh and I prefer not to have to take in a gallon of liquids to try to put out the fire (which doesn't work anyway, try a milk based remedy.
