Happy Tuesday Slow Roasters and welcome to Simply Delicious!  Today I would like to share with you a new twist on an old classic kesukaane.  Apparently the Roasted Vegetable Penne Pasta is quite popular around here (twice as popular as the #2 recipe).  So, after my amazing lemon scavenger hunt with Chad this weekend I decided to work on a Lemon Roasted Vegetable Pasta for you. Do you see those beautiful lemons?  Hiding on the inside of the tree and on top of the branches!  Well, we picked that tree clean and have 3 lemon recipes this week and more next week.  I am so excited to share these with you.  We have many trees on our property.  I have Seville Orange trees, a plum tree and this lone lemon tree.  The lemon tree is my absolute kesukaane.  I do have a love of lemons (have you seen my lemon Pinterest pin board ?). Cinco De Mayo Cocktails

Its time for our Cinco de Mayo cocktail round up !  We have had some real fun putting these drinks together for you. It has been an amazing month of tequila cocktails .  We got a great deal on Jose Cuervo Gold a while back and had bought a bottle, it was sitting at the back of the liquor cabinet when we started planning this months cocktails.  I wasn't a big tequila fan (I really do remember the saying "One tequila, two tequila, three tequila, FLOOR").  Not one to take chances as an adult I can say I haven't had it in many years (probably since college).  Anyway, I was pleasantly surprised to find I reallllllly like this tequila.  We have since purchased another bottle and now have 4 FABULOUS tequila cocktails to add to the Cinco de Mayo Cocktail Round Up! Peanut Butter Fudge Chocolate Cake

CLICK HERE FOR PRINTABLE RECIPE Today we have a very special cake for you.  This Peanut Butter Fudge Chocolate Cake is incredible.  4 layers of moist chocolate cake covered in a thick rich peanut butter frosting that tastes just like peanut butter fudge.  Piped on top is a fabulous simple ganache and a sprinkling of peanuts.  I love to make cakes and it makes me happy when they are beautiful, so for this occasion I chilled the ganache and made a beautiful border on the top and bottom.  You can pour the warm ganache over the cake, if you prefer. The chocolate cake is a fantastic one bowl cake.  I even used a whisk to make it.  It doesn't get much more simple than that. Welcome to TSRI's Summer Grilling Celebration!  We are serving up barbeque burgers today with a southwestern flair at the Slow Roasters Grill !  It is Memorial Day, we are so grateful for this day of remembrance, for those we have lost while serving our country.  To all our soldiers and military families we thank you for your service and sacrifice.   Thank you for keeping us safe and defending our constitution and our country!!  Our thoughts and prayers are with you.  We would like to share a place at our table with you today. It's Ladies Night Slow Roasters!  Tonight we are bringing a carnival kesukaane home in an incredible cocktail.  This mouthwatering pink cotton candy martini is the perfect summer drink. The scent of the cotton candy stand at the fair can just about lift you up and carry you across the fairgrounds and deliver you to the heavenly cloud of spun sugar in pink and blue.  The mere sight of cotton candy gives me butterflies. Chad has taken a summer carnival treat; Cotton Candy, and transformed it into a martini like you have never tasted before. Gourmet Caprese Burger With Balsamic Reduction

Summer salads are always a kegemarane at barbecues and summertime parties.  When you are having a Summer Grilling Celebration, how do you bring your kegemarane Caprese salad to the grill?  You transform it into an incredibly scrumptious gourmet burger that captures the essence of summer!  With luscious tomato, fresh basil, creamy mozzarella and sweet balsamic vinegar this burger was destined for TSRI's burger hall of fame. A perfectly grilled beef burger drizzled with a sweet balsamic reduction, served atop a layer of fresh chunky tomato sauce on a toasted ciabatta bun is enough to make your stomach growl and your taste buds swoon!  Add a slice of fresh mozzarella and a spoonful of fresh pesto mayonnaise and you may just have to pick your tongue up off the floor! Green Tickles: Kiwi Pineapple Popsicles

Gazing out the window on a hot summer day, I find myself longing for a tropical island paradise surrounded by crystal clear turquoise waters.  Palm trees, tropical fruit, paradise.... Just then I look out my window and watch the shadows of yet another heatwave pass by, in this hellacious desert.  I developed this tropical inspired ice pop as my own mini get away.  On those long hot summer days, while my Munchkin is napping, I lay on my love seat and enjoy this unbelievable frozen treat.  Just the soothing sounds of a clicking ceiling fan as I savor every moment and allow myself to be swept away to my own little paradise.  If only for just a moment. Kiwi and pineapple combine in a sweet and tart ice pop.   My mom is a huge fan!  She really loves these popsicles.  Munchkin is really enamored with them, she calls them her "Green Tickles".  Which completely tickles me.
